Ingredients

- Chicken breast: 2 breasts (without skin)

- Sesame oil: a tablespoon and a half

- Quinoa: a cup (soaked in water for at least two hours)

- Avocado: 1 piece

- Tomato: 1 piece

- Cucumber: 1 piece

Parsley: 2 tablespoons (chopped)

Olive oil: a quarter of a cup

Honey: a tablespoon

- White vinegar: 2 tablespoons

- Mustard: a tablespoon

- Salt: to taste

- Black pepper: a pinch

How to prepare

Put the quinoa in a saucepan on the fire and pour two cups of water, then leave the quinoa to boil for about 15 minutes to soften.

Heat the sesame oil in a frying pan over a medium heat, add the chicken breasts and cook them until cooked on both sides. When done, cut the chicken into slices and place on a plate.

Slice the avocado, tomato and cucumber, then arrange the ingredients in a medium-sized bowl.

In another bowl, mix olive oil, vinegar and mustard, then season with salt and black pepper.

Arrange the quinoa and parsley over the chopped vegetables, add the chicken strips, then pour the sauce mixture over them.

Stir the ingredients carefully until smooth, then serve the salad directly on your plate.

- Onion: 1 piece (chopped)

Garlic: 3 cloves (chopped)

- Quinoa: three quarters of a cup

- Vegetable broth: a cup and a half

- Cumin: a teaspoon (ground)

- crushed hot sauce: a quarter of a teaspoon

- salt: a quarter of a teaspoon

- black pepper: a quarter of a teaspoon

- Corn: a cup (boiled or canned)

- Red beans : two cups (canned, washed and drained)

Coriander: ½ cup (chopped)

How to prepare

1. Heat the oil in a saucepan over a medium heat, add the onion and garlic, and saute for ten minutes until it wilts.


2. Add the quinoa to the onions and my heart, then add the broth and season with cumin, hot sauce, salt and pepper and leave it on the fire until it boils, cover the pot and leave it for 10 minutes until the quinoa is cooked and the broth is absorbed.


3. Add the corn and beans, stir and leave the mixture on the fire for another 5 minutes.


4. Pour the mixture into a serving dish, spread the coriander on top and serve.
