Ingredients
The dough:
Flour: 2 cups
Water: as needed
Olive oil: 4 tablespoons
Salt: 2 tbsp
The filling:
Potatoes: 3 grains (boiled and mashed)
Onions: 3 grains (chopped)
Garlic: 3 cloves (chopped)
Hot green pepper: 2 tablets (chopped)
Peas: half a cup
Ginger: 1 teaspoon (fresh)
Green coriander: a teaspoon
Salt: a teaspoon
Curry: a teaspoon
Vegetable oil: 2 tbsp
Vegetable oil: 2 cups (for frying)
How to prepare
To prepare the dough: Mix the flour, water, olive oil and salt in a bowl and mix well until the ingredients are homogeneous and you get a soft dough.
Cover the bowl with a piece of cloth and set it aside for 15 minutes.
To prepare the filling: Heat the oil on the fire, then add the onion, garlic, potatoes, green pepper, peas and ginger, and stir the mixture for 5 minutes.
Add to the coriander mixture, salt and curry and stir well, then remove the mixture from the heat and leave it to cool.
Form the dough in circles, fill it with the samosa mixture, then fold the ends in a triangle shape to close it.
Fry the samosas over the heat for 15 minutes, until they are golden in color.
