Eggplant tray with chicken

Ingredients


    ½ 1 kilo of minced chicken

    2 large eggplant

    3 onions

    3 carrots

    2 tomatoes, chopped

    1 cup of borsch cheddar

    ½ cup of Parmesan

    Salt to taste

    black pepper

    Oregano is ground or fresh

    oil

    Bechamel sauce


How to prepare


    We put onions and carrots with an electric grinder and chop them until smooth.

    In the pan, put four tablespoons of oil, add onions and carrots, and stir until wilted.

    Add the minced chicken and stir over a high heat, then add salt, pepper and oregano, stir well, cover and leave it on a low heat, stirring occasionally, until it is done.

    Chop the eggplant in long slices and roast it on a gas grill or in a sandwich warmer while stirring.

    Grease an oven tray or Pyrex plate, arrange a layer of eggplant slices and sprinkle with salt and pepper.

    Then we put the chicken filling and flatten it, then add half of the cheese sprinkle, then the rest of the eggplant slices with a pinch of salt and pepper.

    We put a layer of bechamel and put the tray in the oven for about 15-20 minutes, then put the rest of the cheese sprinkle and turn on the oven grill until the cheese melts.

    Take out the eggplant tray with chicken from the oven so that it is ready to serve.
