Ingredients

Sauce:


    Parmesan cheese: 70 g (grated)

    Mustard: 2 teaspoons (Dijon)

    Garlic: two cloves (crushed)

    Lemon juice: 2 tablespoons (or apple cider vinegar)

    Olive oil: three quarters of a cup

    Salt: half a teaspoon

    White pepper: 1/4 teaspoon (ground)

    Black pepper: 1/4 teaspoon (ground)


Lettuce: head (roughly chopped)

Toast: as desired (croutons)

Watercress: 50 g (roughly chopped)

How to prepare


    To prepare the sauce: Mix lemon juice with garlic.

    Add mustard, olive oil, white and black pepper, stir well, then put the sauce in the refrigerator.

    To prepare the salad: Mix lettuce, rocca and Parmesan cheese, then season the salad with the sauce while turning them well.

    Add the croutons and serve the salad.
